It's also important to bear in mind that you can only do the best you can, don't stress yourself out over it too much- plenty of hamsters have lived long and healthy lives on what most hamster enthusiasts would consider to be a poor diet:

Creating your own food mix may also not be an economical option as many high quality ingredients can be quite costly. Commercial brands should do a better job at making species appropriate food mixes more widely available to other people and educating the general public on how to feed our pets better.

Since you are in the UK, you may want to look at Bunny Dream Expert Hamster food, they have both Syrian and Dwarf and the expert has a nice variety of seeds.
most things aren't too expensive if i buy human grade foods its just making sure i have the right balance, i dont mind the cost just means i'll work it into my budget, i would just rather not pay silly prices for postage and customs. if i go whole foods than its not to expensive and i can buy it by 500g same as rat rations so its just a matter of ordering what i can from there and what i can source from other places like wholefoods or amazon
I'm working on changing my recipe a little bit, and I have a few questions:
How do I calculate the flour/oil seed ration when using commercial seed mixes as an ingredient?
I think I've forgotten how to use the spreadsheet lol... is the protein, fat and fiber on 100g? Or does it matter as long as it's all the same?
Does anyone have any advice on making a seed mix for a hamster over 1.5 year old?
Is it important to calculate the cabohydrates?
What are some good dehydrated vegetables to include in a seed mix?
